新南糖厂前身为「南化糖厂」，于1949年由南化乡士绅「洪諓」先生所集资创建。因社会变迁，于1952年由法院公开标售，由新竹士绅「杨良」先生标得，创立了现今的＂新南糖厂股份有限公司＂。

杨良先生为台湾红糖业之先驱，远在1930年日据时期，于台湾龙潭地区创设 龙潭制糖会社 ，并开始制造红糖。1952年间，于台湾新竹设立 新生糖厂 ，且在台湾台南南化设立 新南糖厂股份有限公司 ，直至1957年又在台湾南投埔里设立 新高糖厂股份有限公司 。前后共计四家红糖製造厂，一生对于糖业费尽心血。

新南糖厂股份有限公司创立于1952年7月1日，至今已有60馀年之历史，厂址座落于台湾台南南化区，工厂总面积约1公顷，厂区则以製作红糖（黑糖）为主。为应因市场所需，新南糖厂于1994年扩增设备，继而生产手工冰糖（俗称糖酸）。现今，公司仍不断研发并增製多项红糖的延伸加工品，例如：黑糖块、黑糖姜母茶、黑糖冬瓜茶、黑糖丸子…等等，以符合市场期待及需求。

目前，在台湾拥有工厂登记并制造黑糖的糖厂仅剩新竹和南化各一家，而新南糖厂则是至今仍保有传统制造方式的糖厂，以生产黑糖闻名全台。走近厂区，即可从空气中闻到那股特殊的黑糖香气，富有浓浓的古早味。
