老鼎丰的糕点在哈尔滨久负盛名。

这“老鼎丰”字号,也颇有来历。传说清朝乾隆年间,二下江南的乾隆皇帝在品尝绍兴一家果匠铺的美味点心之后,钦赐这家果铺“老鼎丰”字号。从此,浙江绍兴老鼎丰果铺扬名神州,遍地开花。先后有西安、苏州、金华、宁波、沈阳、长春等多处老鼎丰分号创立,这些老鼎丰分号都是联号,联东,不联伙。虽然各自独立经营,但在业务往来上也能相互帮助,视若一家。

民国初年,1912年浙江绍兴人王阿大、许欣庭二人来到哈尔滨,在傅家店正阳大街上办起了“老鼎丰南味货栈”,是前店后厂,货栈主要经营南方风味的干鲜食品和地方名产,工厂则小批量生产南味点心。当时,哈尔滨的糕点作坊都用吊炉烤制食品,而老鼎丰却把南方通行的手提炉引进了哈尔滨。这种手提炉烤火均匀,烤出的点心色泽好、质量高,但炉盘体积小,只适合烤制小批量精细食品。

哈尔滨市民在当时还不太习惯吃南味点心,市场上尽是西式和京式点心。王阿大和许欣庭二人没有急于扩大南味点心的产量来和京、西糕点竞争,而是坚持做精细高质量的南味点心小批量投放市场,以便使哈尔滨市民逐步了解习惯南味点心。这期间,老鼎丰南味货栈主要经营南方各地的风味名产,如金华火腿、苏州肉松、南京板鸭、四川腊肉、福建桔饼、常州瓜条、松花皮蛋及烟酒、糖、茶、罐头等,同时还自制一些南肠、小肚、熏鸡等食品。这样,早期老鼎丰有一大半业务是批发兼零售各种南方风味名产,自制糕点的比重很小,糕点厂似乎只是南味货栈的点缀。

20年代初,老鼎丰以独家经营的南味食品和制做精良的南味糕点引起了哈尔滨消费者的兴趣。王阿大、许欣庭二人在哈尔滨经营了10余年之后,也逐渐摸透了哈尔滨消费者的口味,有意识地生产一些颇受哈尔滨市民喜欢的品种。他们在自制点心供不应求的情况下,相继添制了一些生产设备,扩大了产量,增加了产品种类,并且改进了部分产品的生产工艺。此时,老鼎丰的前店后厂已经初具规模,工人有30多名,房子共160多平方米。在这段时间里,老鼎丰南味货栈经营的自产点心比重逐渐加大,已由过去主要经销南方风味特产变为主要经销自产南味点心了。

30年代初,是老鼎丰的新盛时期,每天能出产千余斤各式糕点,当日就能销售一空。当时,一些有信誉的大商店在节日里都能凭借商店的信誉出售礼票(过去送礼讲究送礼票,受礼者自己持礼票到商店选购商品),借以扩大商店和产品的影响,增加销售量。老鼎丰的点心成了节日不可缺少的礼品。每逢年节,老鼎丰都要出售几千元的礼票,不仅增加了销售额,还为老鼎丰招揽了许多顾客。

党的十一届三中全会以后,老鼎丰为了适应人民群众的生活需要,以创造新品种花样求发展,连年来川酥月饼、密制百果月饼获国家优质产品称号,蛋糕、油酥小水果、一口酥、开口笑获部优,儿童奶油果脯蛋糕、四季饼等获省优。老鼎丰的产品久盛不衰,是因为更加讲求配方科学,工艺独特,所以产品造型多样、花纹清晰、色泽鲜艳、皮馅均匀、果料匀称、细腻酥松。
