马家老鸡起源于明末清初，迄今已有三百余年历史。
明末清初，兵荒马乱，马家祖人从祁州（今河北安国市）逃荒到真定府。一路上风餐露宿，肩挑重担：一头是单传的宝贝儿子，怀里抱着制作老鸡的百年老汤瓷坛子；另一头是行李杂物。可见，这百年老汤跟儿子一样重要。
清朝同治八年（1869年），有记载的一代传人马洛发，把卤鸡定名为“马家老鸡”，并在正定府开设了马家老鸡店，有了相当名气。
1901年12月31日，因八国联军进犯北京而逃往西安的慈禧太后及光绪皇帝还京途中，驻跸正定。在正定府的三天逗留期间，除了游览众多名胜古迹外，还尝遍了各色风味名吃。其中对马家老鸡赞不绝口，称其香、鲜、嫩，对味又好吃。
自从慈禧太后品尝，赞赏后，马家老鸡一度成为贡品，名声大震。

On December 31, 1901, Empress Dowager Cixi and Emperor Guangxu, who fled to Xi'an because of the invasion of Beijing by the Allied forces of eight countries, were on their way back to Beijing. During his three-day stay in Zhengding mansion, he not only visited many places of interest, but also tasted all kinds of famous food. Among them, the old chicken of Majia is praised for its fragrance, freshness, tenderness, and delicious taste. Since Empress Dowager Cixi tasted and praised the chicken, it once became a tribute and became famous.
